It is being discussed across some Disney blogs and boards about a new construction permit that Disney has filed on October 13, 2021, for what seems to be the Mexico Pavilion in EPCOT, at least going by the address listed.
The permit is for what is listed as general construction from New Horizon Construction Services and no specifics have been given.

Of course the internet is buzzing with speculation and most of it is centered on the long rumored ‘Coco’ overlay or addition that could be added or replacing the Gran Fiesta Tour Starring The Three Caballeros.
Nothing official has been announced and since it is listed as “general construction” that could be anything from updating for fixing issue in the attraction, to work done in the restaurant and plaza shopping area. It doesn’t necessarily mean that the attraction is going to see changes.
Until Disney announces changes to the Three Caballeros based attraction I wouldn’t get too excited yet. Heck, they could be doing something to fix the animatronics that keep breaking down or taking them out completely. For now it’s anyone’s guess what they are planning.
